THE TRADITIONAL TAMIL CUISINE
For many of us, Tamil food is a humongous array of traditional vegetarian dishes, but have you ever tied the ‘rabbit curry’ as part of your Tamil meal? The recently concluded 10 day long food festival at Fire, the Indian restaurant at The Park, New Delhi had a wide variety of ancient Tamil cuisine available for its patrons.
This festival served an opportunity to understand flavour combinations and cooking styles from the past and also provided an insight into the structure of meal that our ancestors of the Southern India consumed.
Cinnamon, Nutmeg, Cloves, Cardamom, Cumin, Coriander, Coconut, Rosewater and the likes, season the food and give the warm comforting feel to opens up our senses. Chef Jacob Kumar Sahay from Chennai prepared exotic authentic dishes. Chef Jacob has been awarded IFCA’s ‘Best young instructor of the year 2005-07’ award and has also been felicitated by the former president Dr APJ Abdul Kalam in May 2007 for his extensive research on ancient cuisines of South India.
The specialities (at Fire during the food festival) in starters included Kappai Soodu, Sutta Senai, Alagin Varari, Manjal Yeral Vaattu; in soup - Kollu Soaru; while the main course consisted of Beeraiii, Raja Bhojanam, Mohana Kalavai, Kasthuri Meen Puli, Kunguma Kozhi, Vettai Kari Varaiyal. In breads/ Rice - Manclaga, Alagin Soru, Oon Soru, Ennai Annam, Seer Ponagam; desserts include Mampazha Pinattu, Paruthipaol Halwa, Valli Kilangu Payasam, Mukkani Thean; and the meal concludes with Kariveppilai tea or Malli tea.
Food is generally classified into six tastes - sweet, sour, salt, bitter, pungent & astringent and traditional Tamil cuisine recommends that you include all of these six tastes in each main meal you eat. Each taste has a balancing ability and including some of each provides complete nutrition, minimizes cravings and balances the appetite and digestion.
